DENVER, Co. (Jan. 9, 2015) -- Colts fans hitting the road to Denver will find Hoosier natives there to greet them, including an IU grad who runs a restaurant in the Mile High City.
Clay Markwell moved to Denver four years ago, following his passion to cook food. The Evansville native and graduate of Indiana University opened Scratch Burrito and Happy Tap in the city.
The burrito spot offers a twist on the traditional, using organic ingredients to "turn fast food slow."
Markwell told CBS 4 that Hoosier Hospitality as alive and well in Colorado.
"I know a number of Hoosier transplants that own businesses, that have relocated here. I meet up with the IU grads. Denver is a city of transplants (and) there are a lot of Hoosiers here for sure," Markwell said.
